On the Mountain

Vineyard in Contrada Rinazzo, eastern side of Etna within the Municipality of Milo (CT). Contrada exposed towards the sea, particularly suited for the cultivation of Carricante. Altitude: about 800 mslm

In the Vineyard

Pure Carricante, a native white grape variety from the Etna volcano. The vineyard, consisting of multiple terraces with dry stone walls, grows on sandy volcanic soil, rich in minerals, with a sub-acid reaction. The vines are trained as traditional bush vines, supported by chestnut poles, with a planting density of approximately 8,000 vines per hectare and a yield of approximately 6,500 kg/ha. Mountain climate, humid with frequent rainfall, even snow in the winter months and with excellent ventilation.

In the Cellar

The grapes are hand-picked around mid-October, destemmed and pressed with soft pressing of the bunch. Fermentation takes place for about 15 days at a controlled temperature of 18°C ​​in steel tanks, using a specific native yeast selected in the vineyard after extensive experimentation. The wine is left to mature in the tank on the noble lees, with periodic bâtonnage, for 12 months. After bottling, it is refined in the bottle for about 6 months.

In the Chalice

At sight, it appears straw yellow with bright green reflections. On the nose it is intense, rich, broad, delicate, fruity with hints of orange blossoms and ripe apple. Dry on the palate, mineral, harmonious with a marked acidity and aromatic persistence with an aftertaste of anise and almond.

Serving temperature: 12 – 14°C

At the table

It goes well with all fish-based dishes, even elaborate ones.
